Clos Mesorah Sublim is an exceptional wine produced at Clos Mesorah, from old vines of Carignan (50%) and Grenache (50%) organic. Sublim is only produced in the best years and in very small quantities (around 700 bottles for the 2016 vintage). The vines selected for the production of Sublim are over 80 years old, and have a very low yield which allows to obtain a wine of great concentration.
The harvest is carried out by hand and berry by berry to ensure that each berry has reached its optimum point of maturity.
The wine has benefited from 2 years of ageing in 300-litre barrels to allow slow aging and greater complexity. 30 months of aging in bottle before marketing!
