The Cave Winery produces 100% Cabernet Sauvignon from the Aloni Bashan vineyards in the Golan Heights. This volcanic terroir, composed of basalt and dark soils, combined with mature, low-yielding vines (700 kg/ha), produces concentrated grapes with high phenolic richness.
The 2021 vintage benefited from a rainy winter, windstorms and snowstorms, followed by a dry and temperate spring, promoting optimal flowering and ripening. The summer, without prolonged heat waves, allowed for a gradual maturation, leading to a manual harvest between mid-September and early October.
The vinification favors minimal intervention. After a cold maceration (24-48 hours) to extract color and aromas, alcoholic fermentation lasts 10 days, followed by a post-fermentation maceration to enrich the tannins. The wine is then aged for 24 months in American oak barrels, then aged for 8 months in bottle before being released on the market in June 2024.
This vintage, aged in Radoux Victoria and Seguin Moreau Icon barrels, reveals intense aromas of black cherries, pepper and vanilla. It has a velvety texture, fine tannins and balanced acidity. Although young, decanting is recommended before tasting. Its aging potential is high.
The Cave Winery originated in a cellar dug in the 16th century under the Ottoman Empire, used as a warehouse, then as a wine cellar under the British Mandate. With its humidity level of 80% and its constant temperature of 18°C, it is an ideal natural winery. Founded in 2000, this winery is part of the thousand-year-old Jewish tradition of winemaking, combining ancestral know-how and modern technology to create exceptional wines.
