Le Pavillon de Taillefer is a very nice Saint-Emilion Grand Cru made from organically grown Merlot from the terroirs of the communes of Vignonet, Saint-Sulpice de Faleyrens and Saint-Emilion (clay-siliceous soils with blue clay, iron oxide and gravel).
The harvest is manual and the alcoholic fermentation is natural and without the addition of yeast.
Pavillon de Taillefer represents what should be, according to Catherine and Philippe Cohen, the expression of a Merlot from the terroirs of the right bank of Bordeaux. This is a wine for laying down, which can nevertheless be enjoyed in its youth on the fruit, or kept, so that it develops more evolved notes of violet, truffle, undergrowth or even animal notes.
