Dalton Matatia is much more than a wine; it is a vibrant tribute to Mat Haruni, the man whose vision is the very inspiration for Dalton Winery.
Produced only in exceptional years and in strictly limited quantities, Matatia 2020 embodies a quest for supreme quality and absolute selectivity.
This wine is the fruit of a project that has matured over several years. The vineyards dedicated to this cuvée are given meticulous attention, with yields deliberately reduced to concentrate the maximum flavor in each berry. The harvest is carried out with precision in late September and early October.
The winemaking is a work of art: the different plots are fermented separately. Only the free-run wine (the purest juice) is used to create this wine, after a gentle extraction of color and tannins. The wine then undergoes malolactic fermentation before being aged for 24 months in a selection of new and old French oak barrels.
The crucial step lies in the final selection: each barrel is tasted individually, and only the best are selected for the blend. The wine then rests for a year in the bottle before its release, refining its complexity.
The tasting reveals a dark, intense purple color. The nose is rich, overflowing with fragrant notes of forest fruits, blueberries, and raspberries, enhanced by earthy touches of tobacco and licorice.
On the palate, Matatia 2020 is full-bodied, complex, and structured, with a rare elegance, and possesses very good aging potential.
All Dalton Winery wines are strictly Kosher LeMehadrin and Kosher for Passover. They are certified by the Rabbinate of Merom Galil (Rabbi Yoseph Mishalil), the Beit Din Yoreh Deya (Rabbi Shlomo Machpud), Rabbi Mordechai Ungar (Monsey, NY), and the Orthodox Union (OU).
