The "Family Collection" was created to celebrate the 30th anniversary of Dalton Winery. This series of wines embodies the best of their craftsmanship, offering timeless bottles made with endless dedication and love. This is the founding family's legacy in Galilee.
This 2023 Cabernet Sauvignon comes from the estate's finest plots, located in the Upper Galilee. This region is now recognized as one of Israel's highest quality wine-growing terroirs, producing grapes of exceptional concentration.
The winemaking is meticulous. During fermentation, the grape cap is gently irrigated (pumped over) several times a day to extract deep color and tannic structure in the gentlest way possible.
Before the end of fermentation, only the free-run wine (the purest juice, run off without pressing) is separated to craft this cuvée. The wine is then placed into new French oak barrels, where it matures patiently for about 18 months. This wine is the result of constant selection and refinement.
The 2023 Dalton Family Collection Cabernet Sauvignon displays a dark, intense purple color. The nose is expressive, blending bright berry notes (blackcurrant, blackberry) and refreshing hints of eucalyptus with complex notes of vanilla, chocolate, and tobacco, derived from quality aging.
On the palate, the wine is long, velvety, and deeply satisfying. Its depth and aromatic complexity indicate excellent aging potential. It is a premium wine to be savored, ideal for accompanying rich dishes like roast beef, a rack of lamb, or for vegetarians, a hearty winter stew with eggplants and tomatoes.
All Dalton Winery wines are Kosher leMehadrin and Kosher for Passover. They are under the supervision of the Rabbanut of Israel, Badatz Yoreh Deyah (Rabbi Machpud), the OU (Orthodox Union), and Rabbi Mordechai Ungar of Monsey.
