Clos Mesorah Sublim is an exceptional wine produced at Clos Mesorah, from old organic Carignan (50%) and Grenache (50%) vines. Sublim is only produced in the best years and in very small quantities (around 700 bottles for the 2016 vintage and 900 bottles in 2018). The vines selected for the production of Sublim are over 80 years old, and have a very low yield, which allows for a highly concentrated wine.
The harvest is carried out by hand and grain by grain to ensure that each grain has reached its optimum point of maturity.
The wine has benefited from 2 years of aging in 300-liter barrels to allow slow aging and greater complexity. 30 months of aging in bottle before marketing!
