Embodying the excellence and heritage of Dalton Winery, the "Family Collection" brings together timeless cuvées, born from infinite passion and dedication. This 2024 Sauvignon Blanc is a magnificent expression of this, a kosher white wine of great precision.
The grapes come from exceptional terroirs in the Upper Galilee: the vineyards of Kerem Ben Zimra (on the Ramat Dalton highlands) and Elkosh (Western Galilee). The vineyard management is focused on freshness, with canopy management designed to maximize shade and protect the berries from direct sunlight.
The harvest, in early August, is carried out in two strategic passes. An early first pass to capture the liveliness and typical aromatic profile of Sauvignon Blanc, and a second pass at full maturity to enrich the must with sugars.
Thanks to the immediate proximity of the winery, the grapes are pressed and chilled without delay. Only the "free-run juice" (the purest, naturally drained juice) is used for this cuvée. A brief skin contact (maceration) is then carried out to extract more aromas.
Fermentation takes place in temperature-controlled stainless steel tanks to preserve the purity of the fruit. The wine is then aged on its fine lees for several months, a technique that gives it a fuller texture and a beautiful roundness on the palate, while maintaining its vibrancy.
The result is a crisp, fruity white wine with a medium body and a persistent finish. The nose and palate are marked by exuberant notes of tropical fruits, grapefruit, and pineapple. It pairs wonderfully with baked fish, grilled tuna, or white meats like veal or chicken.
All Dalton Winery wines are Kosher leMehadrin and Kosher for Passover. They are under the supervision of the Rabbanut of Israel, Badatz Yoreh Deyah (Rabbi Machpud), the OU (Orthodox Union), and Rabbi Mordechai Ungar of Monsey.
